There are a number of distinct barbecue regions in America. Carolina both north and south is one of these. This sauce is traditionally mustard based with a vinegar / american mustard taste. Its preferred meats are Pork belly ribs, and shoulder which gives us our pulled pork.
We take a lot of pride in our sauces as we have developed them over a number of years to obtain our version of a Carolina barbecue sauce. They are all made in house and are complemented regularly by our American visitors to our restaurants.
